Chewy Nut and Cereal Bars
- 1 Tbsp vegetable oil, plus more for pan
- 1½ cups (4½ oz) sliced almonds
- ⅓ cup sesame seeds
- ⅓ cup honey
- 3 Tbsp packed light brown sugar
- 3 cups crisp rice cereal (preferably brown rice)
- 1 cup (¼ lb) roasted salted cashews, coarsely chopped
- 2 large egg whites
- ¼ tsp salt
Preheat oven to 350°F. Lightly oil a 9-inch square baking pan; line bottom and sides with parchment and lightly oil parchment.

Warm honey, brown sugar, and oil in a small saucepan over low heat, stirring until smooth.
In a large bowl, stir together rice cereal, cashews, and toasted almond-sesame mixture.
Using a fork, beat egg whites with salt in a small bowl until foamy, 1 to 2 minutes.
Stir honey mixture into cereal mixture, then stir in egg whites. Spread evenly in parchment-lined pan, pressing gently, and bake until golden brown, 35 to 40 minutes. Cool completely, then turn out onto a cutting board and cut into 10 bars.
