Throughout The Great American Chocolate Chip Cookie Book, a new history of the iconic sweet, author Carolyn Wyman sprinkles pop culture trivia and recipes, both fabled and new. Below, her twist on whoopie pies, the classic vanilla crème-filled cake sandwich. “This chocolate chip version is among the more tame whoopie flavor variations available since the whoopie became all the rage at upscale bake shops,” she writes. “It’s much better than lemon lavender, believe me.”
Chocolate Chip Whoopie Pies
- 2½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup (1 stick) butter, softened
- ½ cup packed brown sugar
- 1 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (6 oz) semisweet chocolate chips
- 1½ cups marshmallow crème
- 1 cup vegetable shortening
- 1 cup confectioners' sugar
- ¼ tsp salt
- 1 Tbsp water
- 1½ tsp vanilla extract
- 1 cup (6 ounches) mini semisweet chocolate chips (optional)
For the cookies:
Preheat the oven to 350 degrees.
Line two baking sheets with parchment paper or lightly grease them.
Combine the flour, baking soda, and salt in small bowl.
Using an electric mixer, beat the butter and sugar in a large bowl on medium speed until light and fluffy.
Beat in the milk, egg, and vanilla (the mixture will be thin).
Beat in the flour mixture on low speed until smooth.
Stir in the chocolate chips.
Drop by ¼-cupfuls onto the prepared baking sheets, leaving plenty of room between the cakes. (You should have 16 cookies.)
Bake for 15 to 16 minutes until springy to the touch. Let cool completely on the baking sheets.
For the filling:
Beat the marshmallow crème, shortening, and sugar with an electric mixer until well combined.
Dissolve the salt in the water and add to the marshmallow mixture.
Add the vanilla and beat.
Spread the filling on the flat side of one of the cooled cookies and top with the flat side of another cookie to make a sandwich. Repeat with the other cookies.
Spread the chocolate chips on a plate and roll the edges of all the whoopie pies in them, if desired.
If not eating immediately, wrap the sandwiches individually in plastic.
Makes 8 large whoopie pies.
