My husband will eat anything with pumpkin in it. That wasn’t hyperbole. Don’t get me wrong, I get pretty jazzed about a good pumpkin bread or pumpkin latte every now and then, but since we’ve been together let’s just say I’ve had to expand my repertoire of pumpkin treats.
One of his (and my) all-time favorites is pumpkin chocolate chip muffins. Now, there are countless recipes for delectable pumpkin breads all over Pinterest that involve a list of ingredients and bunch of prep time. Our favorite? Three ingredients and about twenty minutes.

Grandma's Pumpkin Muffins
- 1 (16-oz) can pumpkin puree
- ½ bag chocolate chips
- 1 box spice cake mix
Combine all the ingredients and scoop into a greased muffin or cupcake tin. Bake at 350 degrees for about twenty minutes.
If the batter seems too dry, add a bit of canola oil, and if you like your pumpkin really spiced, add a bit of cinnamon and nutmeg.
