Baked Salmon with Arugula Salsa Verde: A traditional Italian green sauce gets even greener and more vibrant with the addition of chopped arugula; it’s kind of like a salad and sauce in one.
Garlic-Roasted Chicken and Root Vegetables: This is a great recipe to make on the weekend; I like to have leftovers during the week for lunch or to reinvent for dinner.
Stuffed Red Bell Peppers with Whole-Wheat Couscous and Avocado Sauce: This is a great make-ahead vegetarian dish. Stuff the peppers, store them in the fridge, and then pop the dish in the oven half an hour before dinner.
California Turkey Chili: Here, the warming flavors come straight from the Southwest: chili powder, cinnamon, and clove. To lighten things up, I make my chili with turkey and beans instead of all beef.
