If you don’t have fresh strawberries, then any fresh fruit will do, but try to find some fresh strawberries. It’s worth it! Click here to read more about this recipe
- 2 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 cup flour
- ¼ tsp salt
- 2 Tbsp butter
- 6 Tbsp Nutella
- 6 fresh strawberries, stemmed and sliced
- 6 Tbsp whipped cream
Beat together the eggs, milk, and vanilla with a whisk or fork in a bowl.
In a separate bowl, mix together the flour and salt.
Add the flour mixture to the egg and milk mixture about ½ cup at a time. Mix well until there are no lumps, then add another ½ cup.
Melt the butter in a bowl by heating in the microwave no more than 15 seconds.
Pour half of the melted butter into the batter, stirring slowly. (Save the other half of the butter for the frying pan.) The batter should be runny, but slightly thicker than milk.
Place a frying pan on medium heat and allow the pan to get hot.
Pour the remaining melted butter into the pan and swirl it around until the pan is covered with butter.
Using a ⅓-cup measuring cup, scoop the batter into the pan and swirl it around so it covers the bottom.
After 1 or 2 minutes, use a spatula to gently lift the sides of the crepe to see if it is getting nicely browned. If so, the crepe should pull away from the bottom so you can flip it. Flip the crepe and cook the other side for another minute.
Slide the crepe from the pan onto a plate. Spread with 1 tablespoon Nutella and sprinkle with strawberry slices. Roll it up. Repeat for five more crepes. Top each crepe with 1 tablespoon whipped cream and serve!
