Pearl Onion and Parmesan Gratin
- 1 (14.4-oz) bag frozen pearl onions
- ½ cup heavy cream
- ¼ cup + 2 Tbsp grated Parmesan
- ½ tsp kosher salt, divided
- ½ tsp freshly ground pepper, divided
- 1 slice bread
Combine pearl onions with 1 cup water and bring to a boil.
Reduce to a simmer, cover, and cook 8 minutes; drain and pat dry. Scatter onions in a small buttered baking dish.
Combine heavy cream, ¼ cup Parmesan, and ¼ tsp each salt and pepper; pour over onions.
Tear up slice of bread, then combine with 2 Tbsp Parmesan and remaining salt and pepper in a food processor; pulse to make bread crumbs; sprinkle over onion mixture.
Bake in a 400°F oven until browned and bubbly, about 25 minutes. Let stand 10 minutes before serving.
