Chicken Fajita Quesadilla
- 2 cup chicken fajitas, chopped into bite size pieces (see link above for recipe)
- 1 cup pinto beans (or black beans), cooked
- 1 cup Mexican cheese blend, shredded
- 2 cup brown rice, cooked
Place one tortilla in a dry pan over medium heat (I use a cast iron skillet).
Sprinkle ½ cup of cheese over tortilla and ½ cup of chopped chicken fajita mix.
Top with another tortilla and heat through for 3 minutes on each side or until cheese is melted and tortilla is slightly toasted.
Repeat for the second quesadilla.
Cut into wedges and serve.
