Chicken Fajita Rice Bowls
- 2 cup chicken fajitas, chopped into bite size pieces (see link above for recipe)
- 1 cup pinto beans (or black beans), cooked
- 1 cup Mexican cheese blend, shredded
- 2 cup brown rice, cooked
Reheat chopped fajitas, if using leftovers.
Place the first 3 ingredients in a bowl; stir to combine.
Place ½ cup of rice in each bowl; top with ½ cup of the fajita mixture. Serve.
