Herbed Peas with Bacon
- 6 slices bacon, chopped
- 1 (1-lb) bag frozen peas
- 2 Tbsp unsalted butter
- Kosher salt
- 2 Tbsp chopped fresh tarragon
- 2 Tbsp chopped fresh mint
Cook bacon in a skillet over medium heat, stirring occasionally, until crisp, 6 to 8 minutes. Remove using a slotted spoon and drain on paper towels.
Meanwhile, combine peas and ½ cup water in same skillet. Cook over high heat until water boils, then cover, reduce heat to medium-high, and cook until tender, 4 to 5 minutes. Drain. Toss peas and butter in a bowl until butter melts. Season with salt and stir in tarragon, mint, and bacon.
