Mashed potatoes is the secret ingredient used to create this moist, mouth-watering cake. And yes, today is National Potato Day. We think this is the perfect way to celebrate the occasion.
Chocolate Potato Cake
- 2 cups sugar
- 1 cup butter, softened
- 4 eggs
- 4-oz unsweetened chocolate, melted
- 1½ tsp vanilla
- 1 cup mashed potato
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- ¾ cup yogurt
Beat sugar, butter, eggs, chocolate, vanilla, potato, flour, baking soda, salt, and yogurt.
Transfer to a greased 9-by-13-inch pan.
Bake at 375°F for 35 to 40 minutes. Frost.
