Say "Happy Birthday!" to America with a berry-studded flag cake that’s so fun to make, the kids will want to pitch in. Decorating’s the fun part: Arrange blueberries and halved strawberries in the shape of a flag on top of the cake, then pop it into the refrigerator until it’s time for dessert.
- 1 (18.25-oz) white or yellow cake mix
- 3 eggs
- ½ cup oil
- 1 ⅓ cups water
- 3 cup strawberries
- 1 ⅓ cups blueberries
- 1 (8-oz) container Cool Whip, thawed
Preheat oven to 350°F. Spray a 9 by 13-inch baking pan with cooking spray.
In large bowl, beat cake mix with eggs, oil, and water for 1 minute on low speed and 2 minutes on medium speed. Transfer batter to pan. Bake for 35 minutes, until a cake tester inserted into the center comes out clean.
Slice 1 cup of the strawberries. Halve the other 2 cups. Top the cake with the sliced strawberries and 1 cup of the blueberries. Spread with Cool Whip.
Arrange the remaining berries in the shape of a flag on top of the cake. Refrigerate for at least 1 hour before serving.
If you like, cool cake in pan for 15 minutes, then invert onto serving platter. Top with sliced berries, frost top and sides, and create flag from berries on top of cake.
