Toss grilled chicken with peaches, lettuce and tomatoes to create a refreshing summer salad.
Grilled Chicken and Peach Salad
- 2 Tbsp whole-grain mustard
- 2 Tbsp white-wine vinegar
- 2 Tbsp olive oil
- 1½ lb boneless chicken breasts
- 2 sliced peaches
- 3 Tbsp oil
- 6 cup lettuce
- 4 sliced plum tomatoes
Whisk mustard, vinegar, and olive oil.
Rub chicken breasts and peaches with oil and grill until done. Slice chicken. Toss with peaches, lettuce, and plum tomatoes. Drizzle with dressing.
