Sweet mango complements lemony marinated chicken.
Lemon Chicken and Mango Kebabs
- 1 lb boneless chicken breast, cut into 2-inch-long thin strips
- 2 large lemons
- ¼ cup canola oil
- 2 clove garlic, chopped
- 1 tsp five-spice powder
- 4 Tbsp honey
- 1 mango, peeled, cored and cut into 1-inch cubes
- 1 red onion, cut into small wedges
Soak 8 wooden skewers in water to cover. Place chicken in resealable plastic bag.
Squeeze juice from 1 lemon. Cut other lemon into wedges. In a medium bowl, combine lemon juice, oil, garlic, five-spice powder, and salt and pepper. Stir in honey. Pour ½ the marinade over chicken. Let sit 30 minutes.
Spray grill with nonstick cooking spray. Thread chicken onto skewers, alternating with mango and onion. Grill on medium 2 minutes. Brush with remaining marinade. Cook an additional 3-4 minutes or until meat is thoroughly cooked, turning once. Serve with lemon wedges.
