These rice and bean wraps are a snap to make and great for on-the-go lunches.
Rice & Bean Wraps
- 1 (8-oz box) Goya yellow rice
- 2 garlic cloves, chopped
- 1 Tbsp olive oil
- 1 can black beans, rinsed and drained
- 4 spinach or red-pepper wraps
Prepare rice according to package directions. While it cooks, sauté garlic in oil 2 minutes. Add beans. Cook on low until hot. Mix beans with rice. Fill wraps with rice-and-bean mixture. Roll up and cut in half.
Serves 4. Per serving: 560 calories, 100g carbs, 18g protein, 9g fat, 0mg cholesterol, 1420mg sodium, 11g fiber
