Cook the curry powder with the onions for a brief time to mellow the flavor and bring out the sweetness.
Curried Chicken Burger
- ½ cup chopped red onion
- 2 Tbsp olive oil
- 2 tsp curry powder
- 1 lb ground chicken or turkey
- 1 small egg, lightly beaten
- ½ cup fresh bread crumbs
- ¼ cup peeled and grated Granny Smith apple
- ¼ cup chopped mango chutney
- 2 scallions, thinly sliced
- 4 hamburger buns
Coat grill lightly with oil or cooking spray. Preheat for 15 minutes.
Sauté onion in oil in a skillet over medium-low heat, stirring, for 10 minutes. Reduce heat, add curry, and cook, stirring, for 1 minute. Remove to a bowl and cool.
Combine onion mixture with remaining ingredients. Form into 4 patties.
Grill over medium heat for 10 minutes, turning once. Chicken is done when it reaches an internal temperature of 165°F.
Grill buns for about 30 seconds.
Serve burgers in buns. Garnish with tomato and onion, if desired.
