This side dish tastes so refreshing because of the lemon juice.
- 1 cup bulgar (cracked wheat)
- 2 cup boiling water
- 4 Tbsp lemon juice
- 3 sliced scallions
- 1 cup fresh mint
- 1 cup fresh flat-leaf parsley
- ¼ cup olive oil
- 1 tsp salt
- ¼ tsp pepper
- 1 cup cherry tomatoes, halved
In a glass bowl, combine 1 cup bulgur (cracked wheat), 2 cups boiling water, and 1 Tbsp lemon juice. Set aside for 20 minutes.
Drain bulgur in a colander and return to bowl. Add 3 Tbsp lemon juice. In a food processor, pulse 3 sliced scallions, 1 cup fresh mint, and 1 cup fresh flat-leaf parsley until coarsely chopped. Add to bulgur.
Stir in ¼ cup olive oil, 1 tsp salt, and ¼ tsp pepper. Toss with 1 cup halved cherry tomatoes.
