Three-Bean Salad With Grilled Chicken
- 1 small red onion, thinly sliced 8-oz package frozen green beans, thawed 15-oz. can of garbanzo beans, drained 15-oz. can of kidney beans, drained 2 Tbsp chopped fresh mint ½ cup bottled lemon vinaigrette Kosher salt and freshly ground black pepper 2 grilled chicken breasts, skin removed, sliced into long strips
Combine all ingredients except chicken strips in a large bowl; season to taste with salt and pepper. Serve immediately with 3 or 4 chicken strips added to each serving, or refrigerate until ready to plate.
