Summer by the pool could only be made more perfect by adding this refreshing treat. Orange Amaretto Raspberry Ice Pops are a fabulous fresh flavor with a hint of almond to make them really zing!
We have been traveling a lot this summer and have had a lot of pool time fun. My 3 year old is just learning to swim and has really enjoyed popsicles by the pool. We even shipped an ice pop mold to my parents house before visiting so we could share our favorite popsicles, or “pock-sibles” as Munchkin calls them.
Popsicles are the consummate pool party treat. For fun, serve them at your party layered in a clear bowl or dish with ice. Your guest will be wowed and will devour these scrumptious pops. Everyone from my 3 year old on up have all enjoyed cooling off with these fun fruity ice pops. You are going to love them too!

Summery Orange Amaretto Raspberry Ice Pops
- 1 Tbsp orange zest, finely diced
- 1 Tbsp granulated sugar
- 16 oz orange juice, fresh or store bought
- 1 tsp amaretto liqueur or almond extract
- 6 oz fresh raspberries, rinsed and drained
Combine orange zest and sugar in a small mixing bowl. Using fingertips or a fork, smash the two together until the sugar is moist from the zest. Add orange juice and amaretto, stir to combine.
Add raspberries to popsicle molds, dividing evenly. You can smash them in there if you like. Pour orange juice mixture to into molds. Cover with mold cover or aluminum fold and add sticks.
Freeze for 4-12 hours. Remove from molds, serve and enjoy!
I store these in resealable sandwich bags to keep them fresh in the freezer. Place all sandwich bags into a 1 gallon resealable freezer bag and they will keep fresh for months.
You can also use plastic disposable cups, aluminum foil and popsicle sticks if you do not have popsicle molds. I buy the 3 ounce cups for a perfect serving size.
