These muffins are simple to make. Really simple. You’ve probably already got all of the ingredients on hand so you can feel good that you don’t have to go spend more money to make your family this scrumptious treat. The best part is that there is no additional fat in this recipe from oil. All the oil gets replaced with applesauce and apple juice to help make these muffins not only a scrumptious, but also a healthy snack. Apple Banana Corn Muffins
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 ripe bananas
- 1 tsp vanilla extract
- 1 large egg
- ¼ cup honey
- ¾ cup apple juice
- ¼ cup applesauce
Preheat oven to 400°F.
Whisk the first 5 ingredients in a bowl.
In a separate bowl, whisk the remaining ingredients to combine.
Slowly whisk the dry ingredients into the wet ingredients until just combined, trying not to over-mix.
Fill batter into greased or lined mini-muffin cups, about ⅔ of the way up, bake for 15 minutes for mini muffins or 20 minutes for regular sized muffins.
Makes 36 mini or 12 regular size muffins.
